My first contribution to Mag's Kitchen will be my Greasy Rice recipe!  Well, not really mine, but my mom's.  This was the rice dish that I served at the 2003 Thanksgiving/Shawn's B-day Pot Luck.

Greasy Rice (Serves 6-8 people)

Wash 6 cups of sweet rice
Use 70% of normal water level used for regular rice
Soak the rice for 2 hours before cooking

Mix Ingredients: 
1/2 lb pork cut into small strips
Dried shrimps, 1/2 bag (Presoak)
Thinly sliced shitake mushroom, 6 large (Presoak)
Shallots (1/4 bag)

Cooking the Mix:
Heat pan with oil
- Add pork with 3/4 teaspoon of sugar, cook until about 1/2 done.
- Add shrimp with soaking water
- Add sliced mushrooms
- Add soy sauce
Simmer until cooked
- Add shallots for flavoring
 
Add mix into rice approximately 30 minutes after rice is finished cooking.  Toss the rice and serve.

The hardest part about this for me, sadly enough, has been cooking the rice.  For some reason, it just has consistently screwed up, despite the use of different rice cookers.  My mom insists that I'm supposed to use 70% of the water as compared to the amount of water used to cook regular calrose or jasmine rice, but it's always come out undercooked.

Thus, this most recent time, I made it with what would be the normal amount of water for calrose/jasmine without soaking it, and it STILL came out undercooked!  I'll try experimenting with actually soaking the rice for 2 hours and see how it comes out.
